Evaluation of nutritional, anti-nutritional and mineral content of amaranths species grown in Gamo and Konso zone, Southern Ethiopia

Amaranth (Amaranthus sp.) is an underutilized pseudo-cereal with excellent nutritional and functional properties. The compositions, anti-nutritional mineral content of two species were evaluated by using standard procedures. Completely Randomized Design (CRD) was used for nutritional, treatments five replications. compositions Amaranthus cruentus hypochondriacus shown a significant difference (p<0.05) in mean scores excepting moisture content. Phytate oxalate A. (p<0.05), but tannin did not show (p<0.05). calcium, iron zinc mean, scores. grain rich crude protein, fat fiber as compared to common cereal grains (maize, sorghum, rice, teff wheat). can contribute minerals such zinc, which are very important human nutrition. results the current study indicate that provide better values minimum value anti-nutrients minimize binds block absorption certain minerals, iron, calcium.
